Henry shares the steps on how to make Hainan chicken rice at home, according to him, it is quite simple. First, boil the chicken for approximately 7 minutes, then turn off the heat and soak the chicken meat into the boiling water for 20 minutes, drain off the oil. "Boil the chicken with spices so that the meat will be more savoury," he said.
He said that soaking chicken meat in herbed boiled water without fire is aimed at avoiding overcooking the chicken which will ruin the texture of the meat. "Eventhough, chicken remains soft and cooked," he said. Once it is drained off the oil, then cut the chicken into thick slices and serve it on a plate with toppings such as bread crumbs, pieces of red and green peppers, and crispy fried garlic. To add freshness, prepare baby pakcoy, steamed vegetable, sliced tomatoes, and cucumbers as well.
On that occasion, Hendry also shares the recipes of cooking Charsiew Charcoal Barbeque Beef Ribs. "To make these ribs at home, rub ribs weighing at 250 grams with 3 kinds of sauces; bean, hoisin, and sesame," he said. "Add sugar, chicken powder, and red tofu."
Soak the ribs in three kinds of sauces for one night. After that, grill the ribs and serve with crispy rice noodles. This beef ribs mixed with various herbs have soft texture and rich spices.
